Chicken Dum Biryani.... Biryani's are always special....Why it's so special??? It's absolutely because.... For it's unique flavour and aroma..from kids to elders all love it and it's popular world wide...
Here; I do this in pressure cooker to make it ease for all but completely it's a dum process... Let's go in detail-step by step process...
It may look like a lengthy process... But, absolutely it's very easy...
Let's start......

STEPS TO BE FOLLOWED BEFORE MAKING BIRYANI:
1. CHICKEN MARINATION:
Ingredients
- Chicken - 1/2 kg
- Chilli powder - 1 tbsp
- Coriander powder - 1 tbsp
- Pudina leaves - few
- Coriander leaves - few
- Curd - 1 1/2 tbsp
- Ginger garlic paste - 3 tsp
- Salt - 1 tsp
Method of preparation
- Mix all the above ingredients in a big bowl.
- Let it rest for few minutes.
2. SOAKING OF RICE:
- Take 2 cups of basmati rice (approximately 1/2kg)
- Wash it 2 - 3 times perfectly and soak it in sufficient water (like the rice to be immersed in water) for about 30 - 40 minutes.
MAKING OF BIRYANI
Ingredients
- Onion - 2 large(sliced as shown in the image)
- Tomato - 2 small(sliced as shown in the image)
- Pudina leaves - few
- Coriander leaves - few
- Ginger garlic paste - 1tbsp
- Biryani masala - 3 1/2 tsp
- Green chilli - 3-4 (make small slit in the middle)
- Cashew nuts - 6-8
- Bay leaves - 5
- Cinnamon sticks - 4-5
- Cloves - 8-10
- Cardamom - 4
- Oil
- Ghee
- Salt
Method of preparation
- Keep a large pressure cooker (7litres at- least).
- Add oil; let it be more ...
- Now add bay leaves, cinnamon, cloves, cardamom, cashews.
- Once aroma start releasing from the spices; add onions and saute well.
- Now add ginger garlic paste and saute well.
- Add tomatoes.
- Now add our marinated chicken. Mix well.

- Add chillies, salt and biryani masala.
- Mix well and close the cooker with the lid and simmer down the stove.
- Cook at-least 10-12 minutes till the oil gets separated from the chicken. So that it's cooked juicer and softer.
- After this stage add 4 1/4cups of water for 2 cups of rice. (make sure in which cup you have measured the rice in that same cup only you have to add water) .
- Let it boil.
- Now add rice which is been kept soaked. Mix constantly .
- Add pudina, coriander leaves, green chilli and start mixing it again carefully without breaking the rice.
- It has been cooked almost 70% and now the water has also been absorbed .
- Now in this stage add 4tsps of ghee slowly onto the sides of the cooker.
- Once the water has been absorbed completely; it's ready for dum now. It looks like as shown in the below image...
DUM PROCEDURE
- Keep a dosa tawa, let it heat at high temperature and thus when it starts to smoke out . Reduce the stove to simmer.
- And keep our pressure cooker on top of it and close the lid and put whistle .
- Let it cook in dum; in slow flame for about 20 minutes exactly not more or less than that.
- After this turn of the stove(should not open immediately) and let it rest for another 10 minutes and take off the cooker and keep aside then open slowly...
- Give a gentle mix with large slotted ladle..
Now our yummy.... delicious..... "Chicken Dum Biryani" is ready to serve.....
Tips
- Serve hot with boiled egg on topping
- Added onion raitha as side-dish
- Cucumber roundly sliced- 5pcs on side (optional)
- Even chicken gravy added curry to it will make the dish ultimate to next level...
