CORIANDER PULAO...

Coriander pulao... It can be called as green pulao too... It's aromatic and has wonderful taste and appealing....
Basically coriander is good for digestion and has lots of health benefits.. It will be a great lunch box recipe too...And a simple pressure cooker; quick and easy recipe... Let's go to our recipe...


Ingredients 

For Grinding

  • Onion - 3(roughly chopped) 
  • Green chilli - 7/8
  • Coconut - 1/4 cup
  • Coriander leaves - 1 cup
  • Curry leaves - 1/4 cup
  • Peppercorns - 1 tsp
  • Cumin seeds - 1tsp
  • Fennel seeds - 1/2 tsp
  • Curd - 4 tbsp
  • Garlic - 8 cloves
  • Ginger - 2 pieces(1/2 inch each) 


  • Grind all the above ingredients together into a finer paste by adding little amount of water... 

  • Now our ground paste is ready.

Pulao preparation 

Ingredients 

  • Oil
  • Ghee
  • Onion - 1 (thinly sliced)
  • Cashews - few (optional) 
  • Bay leaves - 4/5
  • Cinnamon sticks - 4
  • Cloves - 6
  • Cardamom - 4
  • Fennel seeds - 1/4 tsp
  • Parboiled Rice - 2 cups large
  • Salt
  • Water - 4 1/2 cups
  • Lemon - 1/2

Method of preparation 

  • Take a wide bottomed pressure cooker and Heat it up. 
  • Pour oil and once it's been hot add our spices bay leaf, cloves, cinnamon, cardamom, fennel seeds... 
  • Aroma turns out from the spices... Now add cashews and onion and fry till onion turns golden brown ...“i.e.” caramelize it..

  • After that add our ground masala paste...

  • Wait; till the oil gets seperates from it... 

  • Add water; allow it to boil and add ghee. 

  • Then add rice which is washed and kept ready with that few coriander leaves.

  • Then now add salt. 
  • Close the cooker and allow it to get 2-3 whistles ..
  • After 3 whistles turn off the stove..and allow it to rest for 10 minutes.
  • Ensure the whistle has calm down and then open the cooker and squeeze quarter piece of a lemon and mix it gently...

  • Now our delicious and healthy coriander pulao is ready to serve... 

Tip

  • Serve hot with raitha, salad, pickle and chilli gobi .....
